Excited about my husband's return I got inspired to do some cooking just to test the Instagram app in my poorly lit, enclosed kitchen. What follows is a simple recipe that is sure to please you and your little ones, plus they can help you coat the fish, which you can easily turn into a crafty activity. Recipe follows.
Ingredients
4 small cod fish fillets (wild caught)
Panko crumbs
1 egg
3 tbs of cold water
1/2 cup of flour
dry seasonings of your choice (for fish)
1/4 cup of olive oil
I seasoned my fillets with Herbes de Provence spices, dried garlic and lemon juice, as well a salt Then I prepared three dishes for the the coating. This is where your kids' help becomes handy. Coat the fillets with flour, then the egg wash (combination of egg and cold water), and then the Panko crumbs. Heat up the olive oil in a skillet and place the fillets, without crowding against each other (this allows of even cooking). Saute for about 4 -5 minutes on each side until golden, then transfer to a line sheet in the oven and finish cooking for about 15 minutes on 325 degrees. See how easy that was? The secret is the Panko, my friends! Buen provecho!
